Green Peas supports the consumption of Hudson Valley foods, but the last time we checked, there were no cacao trees from Wappingers to Hudson. Europe, Latin America and Africa are the main sources of chocolates found throughout the US today. Even though we have not seen farmers in New Paltz harvesting cacao, we have, however, found pastry chefs and chocolatiers throughout the valley who combine the chocolates of Hershey’s, Ghirardelli, Guittard and Valrhona with our region’s ingredients. Using apples, pears, berries, eggs, milk and honey, Hudson Valley chocolate artisans and chefs offer everything from chocolate chip cookies to decadent raspberry liqueur truffles.
